Light, fresh, and packed with flavour! These healthy Teriyaki Chicken Rice Paper Rolls combine tender chicken, crisp veggies, and a tangy teriyaki kick for a guilt-free, delicious meal or snack. Perfect for when you crave something tasty yet nutritious!
Ingredients (makes 6):
1 large chicken breast, thinly sliced
3 tbsp teriyaki sauce
6 rice paper sheets
Toasted sesame seeds
1/2 avocado, thinly sliced
2 zucchinis, shredded into strips
2 medium carrots, shredded
Extra teriyaki sauce, for serving
Per serving: 1 scoop Purple Grape Collagen Powder + water
Method:
Slice the chicken breast with scissors into thin pieces, then place in a bowl. Pour over the teriyaki sauce and toss to coat.
Heat a small pan over medium heat and spray with oil. Add the chicken, cooking each side for about 2 minutes.
Soak one rice paper sheet in cold water, then lay it on a damp chopping board for about 20 seconds, until it’s pliable but not overly soft.
Sprinkle toasted sesame seeds in the center, then layer with 2-3 slices of avocado, zucchini, carrot, and 2 pieces of teriyaki chicken, leaving about an inch around the edges.
Fold the bottom edge over the filling, then fold in the sides like a burrito, and roll it up. Repeat for each roll.
Dissolve 1 scoop of grape collagen per person in a large glass of water and stir.
Serve the rice paper rolls with the collagen drink and extra teriyaki sauce. Enjoy!
