Ingredients (Serves 4)

1 medium red chilli
4 garlic cloves
1 (2-inch) piece fresh ginger
1 medium yellow onion
6 tbsp oil (e.g., avocado or canola)
2 tsp ground coriander
2 tsp ground cumin
½ tsp ground turmeric
2 ¼ tins canned diced tomatoes
¾ tsp salt
2 400ml cans chickpeas, rinsed
2 tsp garam masala
¼ cup fresh coriander, for garnish

Method

Blend Aromatics: In a food processor, pulse the chilli, garlic, and ginger until minced. Add the onion and pulse again until finely chopped.
Sauté Base: Heat oil in a large pan over medium-high heat. Cook the onion mixture, stirring occasionally, until softened (about 3-5 minutes). Add coriander, cumin, and turmeric, stirring for another 2 minutes.
Simmer Curry: Pulse the tomatoes in the food processor until finely chopped, then add them to the pan with salt. Lower the heat and let it simmer for 4 minutes, stirring occasionally.
Add Chickpeas: Stir in chickpeas and garam masala. Cover and let simmer on low for another 5 minutes, stirring occasionally.
Serve: Garnish with fresh cilantro and enjoy!
