Ingredients (serves 3)
450g chicken breast or tenderloins
Salt and pepper, to taste
Olive oil spray, for cookingÂ
Mango Salsa
1 mango, diced
1 Lebanese cucumber, diced
1 red capsicum, diced
1 avocado, diced
½ small red onion, diced
Juice of ½ lime
Salt and pepper, to taste
To Serve
Cos or butter lettuce leaves

Method
Season the chicken with salt and pepper.
Heat a skillet over medium heat, spray with olive oil, and cook for 4-5 minutes per side (or until fully cooked). Set aside, let rest, then dice into cubes.
In a large bowl, combine all mango salsa ingredients and stir to mix well.
Arrange lettuce leaves on a plate. Add 2-3 tablespoons of mango salsa to each, then top with diced chicken.
