Enjoy a nutritious and flavourful meal with these Salmon Bites served alongside rice and steamed broccoli, drizzled with a tangy peanut dressing. This dish is quick to prepare, balanced in macros, and perfect for a wholesome lunch or dinner. Paired with a refreshing mixed berry collagen drink, it’s a satisfying way to fuel your day with both flavour and nourishment.

 

Ingredients:

150g salmon fillet, cut into cubes
1/2 tsp minced garlic
2 tsp lemon juice
Salt and pepper, to taste
1/2 head of broccoli, florets
1/2 cup cooked rice, to serve
1 scoop mixed berry collagen drink
1 glass cold water

Peanut Dressing:

1 tsp peanut butter
1 tbsp sweet chili sauce
1 tbsp lemon juice
1/2 tsp minced garlic
1 tsp soy sauce

Instructions:

Add the salmon to a mixing bowl and season with garlic, lemon juice, salt, and pepper. Toss to combine.
Add the salmon to the air fryer basket and air fry at 180°C for 6-8 minutes.
Meanwhile, steam the broccoli and prepare the peanut dressing by whisking all the dressing ingredients together in a small bowl.
Add the collagen to a glass of cold water and stir to dissolve.
In a serving bowl, add the rice, steamed broccoli, and cooked salmon. Drizzle with the peanut sauce.
Serve with the collagen drink and enjoy!
