Looking for a delicious, protein-packed meal that’s easy to prepare? This butter chicken recipe serves 4-5 and combines tender chicken marinated in spiced yogurt with a rich, creamy curry sauce. Paired with a refreshing passionfruit mango collagen drink, it’s a flavourful and nourishing dish perfect for a satisfying dinner.

 

Serves 4-5

Ingredients:
600g chicken breast
1/2 cup plain protein yogurt
1 tbsp lemon juice
2 tsp garam masala
1 tsp ground turmeric
1 tsp ground cumin
1/4 tsp chili powder
1 tsp ground ginger
1 tsp minced garlic

Curry:
1.5 cups tomato passata
3 tbsp plain protein yogurt
1 tbsp cashew nut butter
1 tsp stevia or monk fruit sweetener
1 tsp salt
Rice and coriander, to serve
1 scoop passionfruit mango collagen + 1 glass cold water, per person

 

Method:

Marinate the chicken in the yogurt and spices and refrigerate for 1 hour to overnight.
Heat a large pan over medium heat with a little oil spray. Add the chicken and cook for 3-5 minutes.
Add the passata, yogurt, cashew butter, sweetener, and salt. Simmer for 15 minutes until the chicken is cooked through.
Meanwhile, make the collagen drink by mixing 1 scoop of passionfruit mango collagen with 1 glass of cold water.
Serve the butter chicken over rice, sprinkle with coriander, serve with your drink, and enjoy!
