Indulge in the vibrant fusion of our Collagen-Boosted Salmon and Bok Choy Rice Bowl—a symphony of fresh salmon, crisp veggie, and a collagen-infused sauce. With rice as the base, this quick and nutrient-packed bowl showcases the perfect balance of flavours.
Ingredients (Serves 2)
2 salmon fillets
2 baby bok choy, halved
1 tsp garlic powder
1/4 tsp ginger powder
1 scoop Unflavoured Collagen
1 tsp sweetener
2 tbsp tamari
Olive oil spray
Rice, to serve
Toasted sesame seeds
Spring onions, sliced
Method:
Preheat the oven to 180°C and line a tray with baking paper.
In a small bowl, mix garlic + ginger powder, collagen, sweetener, and tamari.
Place the salmon and bok choy on the baking paper and brush with the sauce. Lightly spray the top of everything with oil.
Bake in the oven for 12-15 minutes or until the salmon is slightly golden.
Serve the salmon and bok choy in a bowl with rice. Sprinkle with sesame seeds and spring onions.
